Nutella Churro Cookies

These Nutella stuffed churro cookies are perfect served warm and slightly gooey. 

(I make 8 cookies with this recipe, you can make however many you want!)

Ingredients:

  • 200g Nutella, frozen into 8 separate balls
  • 140g plain flour
  • 2 tsp cinnamon 
  • 1 tsp allspice
  • 1/4 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp cream of tartar
  • 85g salted butter
  • 50g granulated sugar
  • 59g dark brown soft sugar 
  • 1/2 egg
  • 1 tsp milk
  • 1 tsp vanilla 

For the topping:

  • 75g granulated sugar
  • 2 tsp cinnamon 

Method

1. First prepare your Nutella by separating it into 8 small balls and freezing it.

2. Meanwhile, prepare your cookie dough. In a small bowl, mix your dry ingredients - flour, cinnamon, allspice, baking powder, bicarbonate of soda, cream of tartar. Set aside.

3. Cut your butter into small cubes and slowly brown on the stove. Leave to cool.

4. In a large bowl, combine egg, milk, vanilla, granulated sugar and dark brown soft sugar. Pour in the butter and whisk again, before slowly combining in the flour mixture.

5. Leave the dough to chill in the refrigerator for 1 hour, before separating it into 8 balls. Preheat the oven to 180C. Stuff each ball with the Nutella, making sure that it is completely sealed inside. 

6. Bake for 8-10 minutes until the top of the cookies is just setting. Meanwhile, combine sugar and cinnamon in order to make the cinnamon sugar topping.

7. When the cookies come out of the oven, spoon over the cinnamon sugar and then leave them to cool. Enjoy!

 

Further info:

- These cookies taste best warmed! Microwave for 30-60s.

- Cookies are best consumed within 3 days, but will last for up to 10 days when stored in the refrigerator.
