My Nutella Brookie slices consist of a crunchy milk choc chip cookie base, topped with a white chocolate chip fudgy brownie, topped with a mixture of Nutella and dark chocolate.
I use this recipe to make 16 slices, you can make yours as big or small as you’d like :).
Ingredients:
For the cookie layer:
- 125g cubed salted butter
- 75g granulated sugar
- 75g dark brown soft sugar
- 1 egg
- 1 tbsp milk
- 2 tsp vanilla extract
- 230g white flour
- 1/2 tsp baking powder
- 1/2 tsp cream of tartar
- 1/2 tsp bicarbonate of soda
- 200g milk chocolate chips
- 105g melted butter
- 250g granulated sugar
- 125g dark brown soft sugar
- 3 eggs
- 1 tbsp vanilla extract
- 120g vegetable oil
- 105g cocoa powder
- 90g plain flour
- 1/2 tsp bicarbonate of soda
- 1.5 tbsp cornstarch
- 1/2 tsp salt
- 200g white chocolate chips
For the topping:
- 300g dark chocolate
- 200g chocolate hazelnut spread (nutella)
1. Preparation: Line and grease a deep 9 inch square tin.
2. Make the cookie dough: brown your butter and whisk together butter, sugars, egg, vanilla and milk until light and fluffy. Fold in flour, baking powder, cream of tartar and bicarbonate of soda until a smooth dough forms. Add the chocolate chips and place in the fridge to chill. Preheat your oven to 180C.
3. Make the brownie: whisk the melted butter, sugars, eggs, vanilla and oil until it becomes light and fluffy. Fold in the cocoa, flour, bicarbonate of soda, cornstarch, salt and white chocolate chips until a smooth brownie batter forms. Pour the brownie batter on top of the cookie dough and bake for 30-40 minutes until cooked (the middle will be mostly firm but still have some wobble to it).
4. Make the topping: melt the dark chocolate and Nutella and mix them together. Pour over the brownie and place in the fridge to chill.
5. When firm, cut into sliced and enjoy!
Tips: I like to store my bakes in the refrigerator and then eat chilled, warm or at room temperature. If refrigerated, these taste best when consumed within 5 days.
