Maltesers Cookies

These cookies are stuffed with Maltesers, white chocolate chips and milk chocolate chips and topped with a malted chocolate buttercream with crushed Maltesers for decoration. 

 

Ingredients (9 cookies)

For the Cookies: 

  • 125g salted butter 
  • 75g granulated sugar 
  • 75g dark brown soft sugar 
  • 1 egg
  • 1 tbsp milk 
  • 2 tsp vanilla essence 
  • 230g plain flour 
  • 1/2 tsp bicarbonate of soda 
  • 1/2 tsp cream of tartar 
  • 1/2 tsp baking powder 
  • 100g Maltesers 
  • 100g milk chocolate chips 
  • 100g white chocolate chips 

For the buttercream:

  • 110g salted butter
  • 45g icing sugar 
  • 1 tbsp malt drink powder 
  • 2 tsp golden syrup 
  • 1 tsp vanilla essence 
  • 45g melted milk chocolate 

To decorate:

  • 50g crushed Maltesers 
Method:
  1. Make the cookies: Brown your butter and combine with the sugars, egg, vanilla and milk. Sift in the flour, bicarbonate of soda , cream of tartar and baking powder and gently mix in with a wooden spoon. Pour in the Maltesers and chocolate chips and gently combine into a dough. Place in the fridge for 1 hour to chill. 
  2. Bake: Preheat your oven to 180C. Divide your cookie mix into 9 balls and place on lined baking trays. Bake for 9 minutes until golden on the edges and just setting in the centre.
  3. Make the icing: while your baked cookies cool in the fridge, whisk together all the icing ingredients (remember to melt your chocolate) to create a light and fluffy icing. Place this into a piping bag.
  4. Decorate: once the cookies are cooled, pipe over the buttercream (smooth with a knife if you’d like) and finish with a sprinkle of crushed Maltesers. Enjoy! 

Tips: I like to store my cookies in the refrigerator, and eat these at room temperature. If refrigerated, these bakes taste best when consumed within 5 days. They can also be frozen :).
