These lemon bars are tangy, refreshing and perfect for summer!
Makes 6 Bars:
Ingredients:
For the base:
- 115g butter
- 30g granulated sugar
- 30g dark brown soft sugar
- 140g plain flour
For the lemon filling:
- 225g granulated sugar
- 30g plain flour
- 120ml lemon juice
- 3 eggs
- zest of 1 lemon
Method:
Make the base:
- Preheat your oven to 180C. Whisk your butter in a bowl until light and fluffy.
- Beat in sugars until pale in colour.
- Combine in flour until a soft dough forms. Use your fingers to push the dough flat into a lined & greased brownie tin. Use a fork to prick lines all the way along the dough in order to allow aeration.
- Bake for 18-20 minutes until golden brown.
Make the filling:
- Decrease your oven temperature to 160C.
- Mix sugar, flour, lemon juice, eggs and lemon zest until light and thoroughly combined. Pour on top of your biscuit and bake for 20-23 minutes until the top is turning golden. Place into the fridge and let set for 2-3 hours.
- Cut your bars into (approx) 6 slices, or however many you desire! Top with a sprinkle of icing sugar and enjoy.
