Double Chocolate Muffins

These muffins are perfectly rich and chocolatey, featuring a tangy bakery style chocolate muffin stuffed with dark chocolate chips.

I make 10 muffins with this recipe. you can make your bakes however large you want however the timings are accurate for 10 muffins. 

Ingredients:

  • 250g plain flour
  • 150g granulated sugar
  • 50g dark brown soft sugar 
  • 40g cocoa powder 
  • 1 tsp bicarbonate of soda 
  • 1/2 tsp salt
  • 300g dark chocolate chips 
  • 2 eggs
  • 100g buttermilk 
  • 85g plain full fat Greek yoghurt 
  • 120ml vegetable oil 
  • 120ml milk 
  • 1.5 tsp vanilla essence 

Method:

  1. Preheat your oven to 180C and line a muffin tin with 10 cases.
  2. Make the mixture: Combine all of the dry ingredients including the chocolate chips and add to a small bowl. In a separate larger bowl, combine all of the wet ingredients (eggs, buttermilk, Greek yoghurt, oil, milk and vanilla) and beat until light and fluffy. Slowly tip in your dry mixture and gently combine until a thick mixture forms.
  3. Bake: Bake the muffins for 20-25 minutes until fully set on the top and a skewer goes through the muffin fully clean. Let the muffins cool and enjoy! 

Tips: I like to store my muffins in the refrigerator, and eat these ones warm or at room temperature (microwave 30s for a warm muffin!) If refrigerated, these bakes taste best when consumed within 5 days. They can also be frozen :).
