Chocolate Peanut Butter Oaty Cookies

A brown butter chunky cookie stuffed with oats and peanut butter, dipped in dark chocolate and drizzled with even more, this cookie is perfect for any PB lover (or just anyone in general tbh)!

I make 18 cookies with this recipe, you can make your cookies however large you want but please note that the cooking time will be accurate for 18 cookies- larger cookies will take longer, smaller cookies won’t take as long.

Ingredients

  • 225g salted butter
  • 150g granulated sugar
  • 150g dark brown soft sugar
  • 2 eggs
  • 260g chunky peanut butter 
  • 2 tsp vanilla extract
  • 190g plain flour 
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda 
  • 1 tsp salt 
  • 170g porridge oats 
  • For finishing: 450g dark chocolate 
Method:
  1. Start by browning your butter- cut into small cubes and add to a medium sized saucepan. On a medium heat, keep stirring the butter. It will go through several stages. First, it will melt. Then it will start to boil and bubble violently, before it will become quiet and the bubbles will become thick and foamy. Pay very close attention at this point as the butter will soon start to turn brown and smell caramelised. Take your butter off the heat and let cool a little.
  2. Combine your butter, sugars, eggs, peanut butter and vanilla, beating well as you add each ingredient. In a separate bowl, mix together flour, baking powder, bicarbonate of soda, salt, and oats. Add this to your wet ingredients and gently fold in. 
  3. Separate your mixture into 18 balls and freeze for 30 minutes or chill for 1 hour. Meanwhile, preheat your oven to 180C.
  4.  Bake your cookies for 10-13 minutes, until turning golden on the edges and set in the centre.
  5. Let cool as you melt your chocolate. When the cookies are cooled and set, dip the bottom of each one in the melted chocolate. Place on a tray lined with baking paper to set and drizzle the remaining chocolate over the top of the cookies. Let set fully before you enjoy warm or cold!

Tips: I like to store my cookies in the refrigerator and then microwave them for around 30-60s before I eat them! If refrigerated, these cookies taste best when consumed within 5 days. They can also be frozen :).
